This fruit salad can be eaten for breakfast or as a side dish. It has fruit, salad leaves and carrots making it fresh and ideal for the summer. It is super easy and quick to make.
A handful of rucola
1 small carrot peeled and spiralised
A handful of strawberries washed and cut in half
A slice of melon chopped into small pieces
A slice of pineapple chopped into small pieces
A slice of watermelon chopped into small pieces
3 radishes thinly slices
Apple cider vinegar
Himalayan salt and pepper
A handful of blueberries
Place all the ingredients in a bowl and season to your liking and enjoy!
Recipe this week is this delicious mango chia pudding that my sister and I made. This is another super easy recipe that you can prepare the night before, making it perfect for a quick breakfast on the go or a delicious healthy snack. Summer time is when I find myself craving fruits. Normally I tend to eat more vegetables than fruits but the warm weather leaves me wanting something refreshing. Fruit is very cleansing especially in the morning when the body is most acidic. Ideally fruit should be eaten on its own and in the mornings. This smoothie bowl is not only easy to make but very healthy, nutritious and delicious!
1 cup of strawberries
2 tablespoons of quinoa flakes
5 almonds or 1 teaspoon of almond butter
120ml of almond milk
1 tablespoon of chia seeds
1 teaspoon of bee pollen
Place half the banana, the strawberries, quinoa flakes, almond milk and almonds in the food processor and blend till smooth. Pour in a bowl and put the remaining half banana sliced on top with some strawberries, chia seeds and bee pollen. Enjoy!
There is nothing like a refreshing ice lolly on a warm summers day. These are so easy to make. You can use any fruit you like. All you need are moulds and the fruit of your choice. I chose water melon because it is very refreshing and mango and passion fruit because it is so delicious! Probably my favourite flavour!
For the water melon ice lollies – makes 2
1-2 slices of water melon depending on the size of your moulds. Mine were small so I only used 1 slice.
For the mango and passion fruit ice lollies – makes 2
1 passion fruit
Start by blending the water melon. Water melon is 90% water so you do not need to add any water to it. Depending on the size and quantity of your moulds you may need to use more. Mine were very small. Once blended pour the watermelon into the moulds and wash your blender. Then put the peeled mango, passion fruit and filtered water into the blender and blend. Pour it into the moulds and place in the freezer. After 30 minutes you can insert the sticks in. After 5 hours they should be ready. Remove from the moulds and enjoy!
